There is something so comforting about a heaping bowl of pasta salad. It could be all the carbs that are offering the comfort. Perhaps it’s the richness of the Italian cured meats that sings in this dish. Or was it the creamy Fontina cheese? Regardless of which ingredient you love; this Pasta salad will do anything but leave you cold!
First, start by visiting a local italian deli. The supermarket probably wont yield the quality of meats and cheeses that the this dish requires. However, if you have a supermarket with some of these ingredients; then by all means- do so. It should be said though, that small authentic deli counters generally have the freshest, most delectable offerings. On with our salad!
Ingredients – serves 4 to 6
1 cup hot cherry tomatoes
1 cup kalamata olives chopped
1 cup artichoke hearts chopped (packed in water)
1 cup cubed Fontina Cheese
1 cup Parmesean
1/2 cup scallions chopped
2 Tblsp Balsamic Vinegar
1/4 cup quality Extra Virgin Olive Oil
4 cups cooked pasta
1/8 lb Salami Toscana
1/8 lb. Hot Calabresa
1/8 lb. regular Calabresa
1/8 lb. 16month aged Prosciutto
Assembly is pretty straight forward. Combine all ingredients in a large bowl then cover and chill in the refrigerator for at least an hour. This step is crucial to ensure that all of the flavors “marry” and “get happy”. Once you are ready to serve: simple set out 10 minutes before service. Then enjoy!
